The String Cheese Incident is one of those bands that started out jamming for friends and fun (and free lift tickets at ski resorts), and slowly grew a fanbase that eventually became so big, the band did too. Sort of like the Dave Matthews Band, which formed around the same time, and the now-departed Phish. Also like DMB, the Boulder, Colo.-based String Cheese uses some of the Grateful Dead business model; the band has its own label, merch, ticketing and PR operations, and even its own travel agency and charity foundations (one is called Gouda Causes). Though their early rep was as a bluegrass band (their first high-profile gig was at the Telluride Bluegrass Festival), SCI could hardly be slotted that easily. They
